A Zep is like a hoagie (sub, sandwich) but is only made with cooked salami, a thick slice of onion, tomato, oil and oregano, served on a "Conshy roll" (local bread roll from the Conshohocken Bakery.) "Hoagie spread" made with spicy hot peppers is available at your table.

Published Dec. 9, 2009, 3:01 a.m. ET. In a crowded sandwich-eating world of hoagies, grinders, subs, heroes, and po'boys, Norristown's own zep flies somewhat beneath the radar. But in certain quarters, the intensely local, seven-decade meat-on-a-roll tradition is so closely associated with its birthplace to qualify as the Montgomery County.

Spelled out the differences: A zep's roll is slightly wider than a hoagie's. It contains one meat only: cooked salami. Aficionados rate the quality of salami by its quantity of visible peppercorns, and apparently, Eve's passes muster. It does share hoagie components of provolone cheese, tomatoes, onions, and oregano. But it never has lettuce.

The cheese is mild, the thickly sliced cooked salami seems to be the offspring of a mating with "luncheon meat," and the sandwich is dressed with oil, vinegar, and oregano. Simple and perfect, far more than the sum of its parts. and proof positive that a zep is not a hoagie. The tomatoes on our zep were juicy-ripe Jersey specimens.

Subs. Growing up in northern New Jersey, I knew these sandwiches โ€” piled high with meat, cheese, fixings, and dressing โ€” by one name: a sub. Served on a long Italian roll anywhere from six inches to six feet, this sub sandwich is named for its resemblance to a submarine. "Sub" is probably the most widely used name for this type of cold.

Italian Hoagie. Another sandwich tracing its roots through Italian-American foodways is the Italian hoagie.. though the real stars of the show are undoubtedly the zeps. What's a zep? There's plenty of debate on its origins, but the zep is believed to have originated in Norristown during the 1950s, and is basically a hoagie that keeps it real simple: crusty long roll, one meat, one cheese, big chunks of onion, tomato, salt, pepper, oregano. That's it. Bruno's of Lititz - Lititz
