Hi everyone, in this episode I'll show you how to make one of my favorite recipes, my Lemon Tofu Scampi.Ingredients:Your choice of Pasta1 block of Hodu Soy T.

2 large shallots 3 cloves garlic 4 tbsp. vegan butter (such as Earth Balance) 5 tbsp. extra virgin olive oil 1 package firm tofu 1/2 tsp. red pepper flakes 3/4 cup dry white wine 1 lemon (zest & juice) Salt & pepper 1 handful fresh parsley Directions Cook the linguine according to the instructions on the package, and set aside.

Preheat oven to 400 degrees. Press tofu by placing it on a plate covered with 3 layers of paper towels. Cover the tofu with 3 more layers of paper towels and put a weight on top. (I use a large can from the cupboard.) Press it for 30-60 minutes, changing paper towels if needed. Then pat the tofu dry and slice into 1-inch cubes.

Heat olive oil in a large pan and place the tofu seasoned side down. Sprinkle the remaining spices on the top. Cook over medium high heat for 3-5 minutes per side until golden. Remove tofu. Melt the earth balance in the same pan. Add onion. Cook until translucent.

Instructions. Drain and press tofu then cut into 8 triangles. dunk 1 at a time into egg mixture then dip into panko-set aside. In a large skillet-heat with olive oil to coat. add tofu and brown on each side remove from pan and place on paper towel. Add butter to pan with garlic and saute.

The word S campi usually refers to a large shrimp, prepared in garlic sauce, and served over pasta or bread. Instead of shrimp, we made it one of our more affordable food recipes by using mushrooms. I used to like shrimp scampi back when I ate seafood. Read more about my pescatarian phase transition.

Prepare tofu noodles according to package instructions. Heat olive oil over medium-high heat in a large skillet. Add in minced garlic and cook until fragrant (about 30 seconds). Add shrimp and lemon juice and zest. Cook the shrimp for a couple of minutes on each side.

Preparation. Heat a large 12-inch skillet over medium. Melt the butter and oil, then add the shallot, stirring until softened slightly, about 1 minute. Add the mushrooms and cook until the mushrooms are soft but still plump, 3 to 5 minutes. Add the garlic and toss until fragrant, 15 to 20 seconds.

So I used a small cookie cutter to make circles. Such a fun way to eat a really delicious dish. Use the tofu scraps for a scramble!

Ingredients 1 tablespoon olive oil 1 lb tofu, extra firm, cut into 1" squares that are ½" thick 1 15 oz can hearts of palm, drained and sliced diagonally 2 tablespoons olive oil 2 tablespoons vegan butter 4 garlic cloves, minced 1 cup white wine ⅛ teaspoon chili flakes juice of ½ lemon 2 large zucchini, spiralized into noodles

Most scampi sauces also contain lemon and parsley. Although scampi is most often made with shrimp, it can also be made with chicken, fish, scallops, lobster, and vegetables.

Add in the tofu, stirring for a minute to allow it to soak in the sauce. Add in your desired amount of linguine, and stir everything together in the pan to coat the noodles with the scampi sauce. Transfer to plates or bowls to serve. Finally, chop up fresh parsley and sprinkle a little on top of each plate or bowl of scampi.

This recipe steps away from a traditional shrimp scampi and adds an intriguing balance between tang & spice. Plus, who doesn't love an excuse to crack open a bottle of vino and have a glass while working in the kitchen!
