As far as jam-making goes, this was a pretty simple process. Blanch, peel, and then puree the peaches in a blender. Combine ground peppers, vinegar and sugar in a large, nonreactive stockpot. Bring to a brisk boil, and boil for 3 minutes. Boiling The Mixture. The key to this sweet pepper jam recipe is to let the mixture come to a boil not once, but twice. Once the peppers have been added to a large pot, add the vinegar and pectin.
