Brush the salmon pieces with olive oil. Smear each piece with the spice/sugar mixture, rubbing it in well. Place the salmon in a small pan. Cover and refrigerate for 15 minutes. Meanwhile, preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Put the pan of salmon in the oven and bake for 10-15 minutes, and then broil for 10 minutes.

Lay the salmon on top, skin-side down, then cover with the rest of the salt mixture. Make sure the fish is completely encrusted in salt. Cover the dish loosely with cling film and put in the fridge for 48 hours. When the salmon has cured for 48 hours, put the molasses in a small pan with the bay leaves, cayenne pepper and paprika.
