Pheasant Tortilla Soup

Directions: In large stock pot or Dutch oven add olive oil, onion and garlic cooking over medium heat until onions start to sweat. Add cilantro, 4 torn tortillas and green chilies cook for another 3 minutes stirring continually. Add stock, pheasant, spices, corn, beans and remaining 4 tortillas. Bring soup to a boil and reduce heat to simmer.

Smoked Pheasant. Step #1 - Bring 3 gallons of water to a boil, adding all ingredients, reduce heat to simmer and cook for 15 minute. Step #2 - Turn off heat and allow to cool. Submerge pheasant in brine and place in refrigerator for 6-8 hours. Step #3 - Brine birds 8 hours in refrigerator or cooler filled with ice.
