Join me in my kitchen as I guide you through the simple steps to create an authentic Puerto Rican Mofongo. This recipe is a favorite, and I'm excited to shar.

Remove from the oil and place on a paper towel. For old-style Dominican mofongo: Wrap the plantains in aluminum foil. Bake plantains in a preheated oven at 400ºF [200ºC] for 35 minutes, or cook in an air fryer preheated to 350ºF [175ºC]. Remove the plantains from the oven and let them cool down for 5 minutes.

After 1 minute, and the oil is slightly WARM, add the plantain slices. Fry for about 5-7 minutes or until the bottom just starts to change color (BUT NOT BROWN). Heat 4 to 6 cups neutral oil in a large saucepan (enough to go about 2 inches up the sides of the pan) over medium-high heat until 350ºF. Add half of the plantains and fry until golden-brown and soft or fork tender, 5 to 7 minutes. Transfer to a paper towel-lined plate and repeat frying the remaining plantains.

Mix the mofongo. With a potato masher or an electric mixer set on medium, gently mash the plantains and pork rinds together. You want some bumpy texture, rather than a smooth paste. Add about additional fat, 1 teaspoon at a time, to help the mofongo stick together; it shouldn't be dry. Taste and add more salt, if necessary.
