Method. Heat the oil in a large saucepan over a medium heat. Add the onion, celery and carrots. Once they start to sizzle, reduce the heat, cover the pan and sweat the veg, stirring once or twice, for 10 minutes. Add the stock and/or water. Bring to a simmer and cook for 12-15 minutes, or until the carrots are tender.

Cook for 5-7 minutes until the carrots are almost tender. Add the broth, star anise and salt, bring to a boil, reduce the heat to medium-low and simmer, covered, for 15 minutes. Discard the star anise. Use a blender stick or food processor to puree the soup until smooth. Add the heavy cream, white pepper and dill.

Notes. Recipe adapted from my creamy roasted cauliflower soup and roasted carrots recipe.. Carrot ginger soup variation: Add freshly grated ginger with the garlic and ground spices. Use 1 teaspoon for subtle ginger flavor, 2 teaspoons for more prominent flavor, or 1 tablespoon for relatively spicy carrot-ginger flavor.
