Step 1 - Slice the tuna. Using a very sharp knife, slice the tuna steak into thin slices. Step 2 - Season and serve. Arrange the slices on a serving platter and season them with salt and pepper. Top the fish with red onion, capers, olive oil, and a drizzle of fresh lemon juice. Serve lime wedges on the side, and enjoy!

Ahi Carpaccio: The description on the menu falls short in describing this refreshing dish. The ahi was thinly cut and fresh. I detected no fishy taste. Before ordering, we were afraid that the wasabi pesto would be overwhelming, but it was well balanced. The sweet shoyu dipping sauce was a nice touch, and the picked cucumbers were great for.

Once all tuna is sliced start arranging it on a platter. Leave a third of the platter empty so you can add the greens and baguettes. Start adding the toppings over the tuna: onions, jalapeños, capers, olive oil, salt and pepper and lime juice. The tuna carpaccio is ready! serve it as is with a fork, or on crusty bread.

Mince the green onion and thinly slice the fennel bulb. Place a layer of fennel slices over the fish, then a sprinkle of green onion, and drizzle the whole thing with a little more olive oil. Crack some black pepper over the top and add a few pinches of sea salt to finish the dish. Refrigerate until just before you serve, and include some.

Place Tuna on top of cracker of your choice. PLace diced onion on top of Tuna. Take a small plastic sandwich bag and cut small hole in corner. Spoon wasabi mayo into bag.
